Ingredients:
- 6 pounds corned beef brisket
- 10 cups chicken broth
- 2 heads of cabbage
- 4 medium turnips
- 6-7 carrots, halved
- 20 medium red potatoes, in jackets
Ingredients for Sauce:
- 2 medium sliced peppers (1 green, 1 yellow)
- ½ cup butter, melted
- ½ cup flour
- ½ cup fresh parsley, chopped
- 6 Tbsp. Irish Whiskey
- 6 Tbsp. Dijon Mustard
Directions:
Simmer beef in chicken brother until tender (about 4-5 hrs). Remove meat, add cabbage, turnips, carrots and potatoes and cook for 30 minutes or until tender. Transfer to platter with meat and keep warm.
Skim fat off 4 cups of the broth. Saute butter and pepper slices in sauce pan, over medium heat. Add, flour, stirring frequently. Slowly add the heated broth, again stirring frequently, until sauce begins a slow boil. Add the Irish Whiskey and the mustard. Continue to stir until sauce begins to slightly thicken. Serve as a gravy with the meat and vegetables.
