Farmers Market Pasta Salad

Ingredients:

  • 2 C. rotini Pasta, Cooked, Drained
  • 1 C. Broccoli Florets
  • 1 C. Carrots, Sliced
  • 1 C. Cherry Tomatoes. Halved
  • ¼ C. Green Onions, Sliced
  • 16oz. Container Cottage Cheese
  • ½ C. Ranch Dressing
  • Salt & Pepper

Directions: Toss Rotini and vegetables in large bowl. Add cottage cheese and dressing. Season to taste with salt and pepper.

Bailey’s Irish Cream

Ingredients:

  • 1 cup light cream
  • 14 oz. can Eagle sweetened condensed milk
  • 1 2/3 cup Irish whiskey
  • 1 tsp. instant coffee
  • 2 Tbsp. Hershey’s chocolate syrup
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract

Directions:

Combine all ingredients in a blender set on high speed for 30 seconds. Bottle in a tightly sealed container and refrigerate. The liqueur will keep for at least 2 months if kept cool. Be sure to shake well before serving. Makes 4 cups.

St. Patrick’s Day Feast from the Merchants Family Cookbook

Ingredients:

  • 6 pounds corned beef brisket
  • 10 cups chicken broth
  • 2 heads of cabbage
  • 4 medium turnips
  • 6-7 carrots, halved
  • 20 medium red potatoes, in jackets

Ingredients for Sauce:

  • 2 medium sliced peppers (1 green, 1 yellow)
  • ½ cup butter, melted
  • ½ cup flour
  • ½ cup fresh parsley, chopped
  • 6 Tbsp. Irish Whiskey
  • 6 Tbsp. Dijon Mustard

Directions:
Simmer beef in chicken brother until tender (about 4-5 hrs). Remove meat, add cabbage, turnips, carrots and potatoes and cook for 30 minutes or until tender. Transfer to platter with meat and keep warm.

Skim fat off 4 cups of the broth. Saute butter and pepper slices in sauce pan, over medium heat. Add, flour, stirring frequently. Slowly add the heated broth, again stirring frequently, until sauce begins a slow boil. Add the Irish Whiskey and the mustard. Continue to stir until sauce begins to slightly thicken. Serve as a gravy with the meat and vegetables.

Spinach Bread Appetizers from the Merchants Family Cookbook

Ingredients:

  • 1 Loaf French Bread, sliced horizontally
  • ½ C. Butter
  • 1 Onion Chopped
  • 1-2 Garlic Cloves, minced
  • 10 oz. Package Chopped Frozen Spinach
  • 1C. Shredded cheddar Cheese
  • 1C. Shredded Mozzarella Cheese
  • ¼ C. Parmesan Cheese

Directions:
In a sauté pan, melt butter, sauté onion. Add minced garlic. Squeeze spinach dry. Add to onion mixture. Remove from heat; mix in cheddar and mozzarella cheese. Divide mixture in half and spread evenly over the sliced halves of bread. Sprinkle with parmesan cheese. Place on baking sheet and bake at 350 degrees for 8-10 minutes or until cheese is melted. Cut in 1-1/2 in slices to serve.
